Simple Healthy Meal for Dinner: Tomato Egg Stir Fry

(Makes 2)

Ingredients:
- 4 eggs
- 1 cup of diced tomato
- 2 table spoons of diced green onion
- 1 table spoon of organic ketchup
- 1 pinch of sea salt
- 1 pinch of white pepper powder
- 1 pinch of stevia or organic brown cane sugar
- 1 table spoon of extra virgin olive oil

Directions:
1. Crack eggs into a bowl and beat for 1/2 minute. Scramble eggs with oil and a tiny pinch of sea salt. Set aside.
2. Heat frying pan or wok on high. Add olive oil.
3. When oil heats up, add green onion and tomato. Stir for 1/2 minute.
4. Reduce heat to med-high, and add ketch up, sea salt, sugar and white pepper powder. Stir for another 1/2 minute.
5. Reduce heat to low-med, and let contents cook for two more minutes. Stir occasionally (about every 15 seconds or so).
6. Turn heat up on high. Add eggs. Stir rigorously for another minute.

Done. Enjoy with a side of vegetables.
