Simple Healthy Lunch: Egg and Avocado on Whole Wheat
Ingredients:
- 1 ripe avocado, de-cored and peeled
- 2 pieces of whole wheat bread
- 2 eggs, already fried with extra virgin olive oil or butter
- 1 tea spoon of paprika
- 1 pinch of black pepper
- 1 slice of all natural swiss cheese
Directions:
1. Lay bread on plate.
2. Smooth avocado halves on bread, and press with fork.
3. Add swiss cheese on avocado.
4. Lay fried eggs on cheese.
5. Splash paprika and pepper on eggs.
6. Enclose two pieces of bread to form a sandwich.
